Today, I didn’t eat all morning, then was starving and made a large but quick afternoon lunch. Here it is for your visual enjoyment:
I made this chicken spontaneously, but it turned out so good that I decided to share it with you guys. Here goes.
- fresh chicken breast
- 1/2 cup single cream
- 3 teaspoons Cajun spices
- 1 teaspoon chilli
- juice of 1 lemon
- extra virgin olive oil
- salt and black pepper
- Squeeze the lemon juice onto the chicken, and rub it with the Cajun spices and chilli.
- Heat some some olive oil, and slightly fry the chicken on both sides, just to seal it.
- Add the cream and leave to simmer on low heat for 5 minutes.
I ate my chicken with chips and a side salad. The salad consisted of iceberg lettuce, dolmades (rice-stuffed vine leaves), garlic feta cheese, onions and tomatoes. Delish.
